Insomnia Cookies now open on the SouthSide of Bethlehem, Pa
BETHLEHEM, Pa. — Insomnia Cookies opened its SouthSide Bethlehem storefront on Tuesday, July 15, drawing steady crowds on its first day of business. The grand opening is scheduled for Friday, July 18.
The late-night bakery, located at 606 E. Third St. on the ground floor of Six10 Flats, offers pickup and delivery of warm cookies, including classic, deluxe, vegan, and gluten-free varieties. The Bethlehem location marks the chain’s first in the Lehigh Valley.
Classic cookies are priced at $2.69 each, while deluxe options — which include brownie varieties — are $4.69 each. The shop also offers cookie sharing packs for groups.
During the soft opening, customers formed a line that stretched nearly to the door, though service moved efficiently for the new business.
The store features fresh cookies served hot from the oven, and delivery service is already operational for customers who prefer to order in.

“Insomnia Cookies is pretty much a company that’s based on good vibes, good energy,” said store manager Michael Cooley. “We’re open all night — the name tells you everything. We just wanted to bring a whole new vibe to this area.”

The Bethlehem store will also be the first location to feature specials and challenges set by the store manager.
Cooley said community members should be on the lookout for the Belly Buster — six cookies and five layers of ice cream. Customers who finish it in five minutes win a free T-shirt.
Founded in a college dorm in 2003 by two University of Pennsylvania students, Insomnia Cookies is known for staying open late — often until 1 a.m. on weekdays and 3 a.m. on weekends — and catering to students. The South Side location is just blocks from Lehigh University and Moravian University.
“There’s no limit on how many cookies you can order — we can package them all kinds of ways,” Cooley said. “We even have cakes, ice cream served by itself in cups, and you can build your own cookie-ice cream combo or try our cookie’wiches.”

Cooley said the apple pie and peach cobbler cookies are currently best sellers.
The company has more than 265 stores nationwide, including locations in State College and near Temple University in Philadelphia.
